Is it possible to set my fields and varieties as private to restrict access from the enterprise?

Yes, the user can do this on the Field Configuration menu on the web portal

In an enterprise system model, data collected by the system is generally accessible to the linked enterprise. However, certain scenarios require discretion, such as when a crop is cultivated or harvested on behalf of another customer or organisation and needs to remain confidential. 

If a prior agreement exists between the user and the enterprise to allow data collection for crops not associated with the enterprise, users can designate specific fields or varieties as private. Setting a field or variety to private ensures that its data stays confidential and is not displayed to the enterprise account. 

This can be managed within the Field Configuration menu in the portal. While editing a field, users have the flexibility to adjust privacy settings for each variety individually, as illustrated below.
